Résumé: This work aims at the theoretical study of the quinoa plant, which has a great nutritional value and is very popular in the treatment of many of different diseases, as chromatographic separation (GC/MS) applied to chloroform extract allowed Proposing ten formulas for different compounds, including: aliphatic alcohols, aromatic compounds, esters, organic acids....... We determined some of the physicochemical properties of the most important proposed compounds from the results of chromatographic separation, and that is By molecular modeling by Hypercham and Gaussian software, in Hypercham where We used different calculation methods to model it, including: molecular mechanics (MM+), and semi-empirical quantum mechanics. (PM3) that allows determining the geometry of the molecule, so we were able, through this program, to identify the QSAR descriptors and some physical properties. As for the Gaussian program, we used the semi-empirical quantum mechanics method PM3 for theoretical calculations of dipole moments and properties of compound molecules.
