Etudes Des Propriétés Biologiques Des Composés Phénoliques Issus De Sous-produits Oléicoles

Résumé: Les margines sont des effluents qui sont générées lors de l’extraction de l’huile d’olive vierge, ils sont riches en matière organique (composés phénoliques, lipides, sucres, protéines…) épandus dans la nature , Plusieurs travaux ont été effectués pour remédier les impact négatif des margines sur l’environnement .Dans ce contexte, nous avons réalisé une étude expérimentale basé sur la présentation des techniques pour effectuer une analyse physico-chimique (PH,coductivitè et matière sèche, matière minérale), extraction des poly phénols totaux à l’acétate d’éthyle, criblage phytochimique et dosage des composés phénoliques par colorimétrie (la méthode de Folin-ciocalteu) afin d ‘évaluer l’activité antioxydant par la méthode de piégeage du radical libre DPPH et l’activité antibactérienne des extraits phénoliques. La valorisation nous a permet de remédier l’impact negative,ameliorer la rentabilité du secteur oléicole . The vegetable waters are effluents which are generated during the extraction of virgin olive oil, they are rich in organic matter(phenolic compounds ,lipids,sugars, protiens ….)spread in nature ,serveral works have been carried out to remedy the negative impact of vegetable waters on the environment , in this context,we carried out an experimental study based on the persentation of techniques for performing a physico-chemical analysis (PH,coductivity and dry matter mineral matter),extraction of polyphenols total with ethyl acetate,phytochemical screening and determination of phenolic compounds by colorimetry (the folin - ciocalteu method) in order to evaluate the antioxidant activiy by the method of scavenging the free radical DPPH and the antibacterial activity of the extracts phenolic . The valuation has enabled us to remedy the negative impact,to improve the profitability of the olive sector . المياه النباتية عبارة عن نفايات سائلة تتولد أثناء استخلاص زيت الزيتون البكر، فهي غنية بالمواد العضوية )المركبات الفينولية ، الدهون، السكريات، البروتينات....( ونظ ا ر لانتشارها في الطبيعة، قد تم تنفيذ العديد من الأعمال لمعالجة التأثير السلبي للمياه النباتية على البيئة. في هذا السياق أجرينا د ا رسة تجريبية تعتمد على عرض تقنيات إج ا رء التحليل الفيزيائي و الكيميائي ) PH ، الإنتاجية والمادة الجافة ،المواد المعدنية (، استخ ا رج البوليفينول الكلي مع أسيتات الايثيل ، الفحص الكيميائي النباتي وتحديد المركبات الفينولية عن طريق قياس الألوان)طريقة فولين سيوكلتو( وتطرقنا أيضا لتقييم نشاط مضادات الأكسدة من خلال طريقة تنظيف الجذور الحرة DPPH والنشاط المضاد للبكتيريا لمستخلصات الفينول. وبالتالي لقد مكننا هذا التثمين من معالجة التأثير السلبي لها، وهذا لتحسين ربحية قطاع الزيتون.
