Résumé: His work aims at optimizing the parameters influencing the extraction of the essential oil of Zingiber officinal. By hydrodistillation, the main parameters studied are the temperature, hydromodule and duration of extraction. The results of the tests carried out made it possible to observe a significant increase in the oil yield at a temperature of 100°C.and 75/500(w/v) hydromodule after three hours of extraction
