Résumé: The purpose of this study is to test the activity antioxidant and biological of raw extract of the peel & seed pomegranate fruit, Punica granatum. L. To achieve this objective, we made first inventory of chemical compoundof secondary metabolism by used a variety of alcoholic extracts, water and a mix ofwater- alcohol extracts for an antioxidant and anti-bacteria test. The extraction yield of the sweet pomegranate seeds aqueous extract was the most copious, was estimated to be 68.75%.Through this study we foundthat pomegranate peel fruits are rich in secondarymetabolism of polyphenols and flavonoids.In this study we found that pomegranate seeds are rich in secondary metabolites of polyphenols and flavonoids. In addition, the antioxidant activity of the previous extracts has been determined using DPPH and TAC. The highest value in the alcoholic extract was the sour pomegranate peel for DPPH, IC50= 1.14 μg/l, and same extracts for TAC and estimated at 565.53 mgEAG/g. The electrochemical method observed the previous results with the highest electrical intensity I=18.316 μA.cm-2in the alcoholic extract.As for the activity of theextracts in terms of their ability to inhibit bacteria, we found that bacterial strains were sensitive to the various extracts, but However, the ethanol extract was the most activity when used against the bacteria P.aerogenosa with a damping diameter of 19mm.In addition, it would found that pomegranate peel was more active then pomegranate seed and sour pomegranate more active then sweet pomegranate.
