Résumé: This theme is based on the study of possible process of development-improvement of dairy production at the level of the dairy of Adrar, by making a descriptive comparison between the old unit and the new unit of the dairy of Adrar. Secondly, the new unit has a very large, well-organized two-storey administration and a caretaker's room, the workshop is formed by several fairly modern, very sophisticated and precise production lines in order to achieve higher quality. In addition, a large analytical laboratory will be equipped with modern tools and equipment, and a more accommodating storage room for raw materials. It produces Sharbet and several dairy derivatives as well as diversification in packaging forms with a milk production capacity of 5000 liters / hour.
