Etude Des Caractères Technologiques Des Bactéries Lactiques Isolées À Partir De S’men Camelin
Résumé: Smen is a substance that Algerian nomads used frequently and was used for medical reasons; fermented camel milk is used to create this product and lactic bacteria it considers as natural habitat. The latter has a significant impact on improving the organoleptic quality of the product through the production of metabolites. The aim of this work is to study the technological powers of 12 strains of lactic acid bacteria isolated and pre-identified from camelina smen. The technological skills sought are proteolytic, lipolytic, flavouring, texturing and antimicrobial activity. These isolates belong to four bacterial genera, streptococcus sp, lactococcus sp, pediococcus sp and enterococcus sp. The streptococcus sp and lactococcus sp genera are the two dominant genera with the same percentage of 40%, these strains have high proteolytic activity and low lipolytic activity and are capable of degrading citrate and arginine with an effective antimicrobial activity against the pathogenic strain staphylococcus aureus.
