Etude Physico-chimique Et Microbiologique Du Lait De La Chamelle « Camelus Dromedarius »collecté Localement À La Commune Adrar
Résumé: This study focused on the analysis of camel milk samples of the "Targui" breed taken from the commune of Adrar. The physico-chemical and biochemical analysis of the "50" camel milk samples was performed by measuring pH (6.24 to 6.86), titratable acidity (15.5 ° to 18.4 °) , density (1022 to 1033.8), total solids (116.6 to 126 g / l), minerals (6 to 6.9 g / l), fat (28 to 35.1 g) / l) lactose (46.4 to 48.4 g / l), freezing point (-0.469 to -0.494 ° C), proteins (31.7 to 33.1 g / l), vitamin C ( 29 to 39 mg / l), electrical conductivity (6.08 to 6.16 mS / cm) and the absence of antibiotics. These analyzes revealed that the milk collected overall has a composition that is more or less similar to that of the milk of other breeds and in particular cattle. A microbiological line of "50" camel milk samples has several microbial attributes of quality in (CFU / ml) such as: FAMT (1.6.103 to 4.4.103), total coliforms (4 to 1.5.102), faecal coliforms less than 6, staphylococci aureus and yeasts and molds below 2.102 and the absence of Salmonella and Clostridium sulphito-reducing agents. These analyzes confirm the good microbiological quality, which indicates the good health of the camels and the hygiene of the milking.
