التغير في عادات تحضير و استهلاك الخبز التقليدي بمدينة ميلة - دراسة أنثروبولوجية

Résumé: تندرج هذه الدراسة ضمن الدراسات ا أنثروبولوجية الكيفية، المهتمة بموضوع العادات الغذائية لدى العائلة الجزائرية، حيث تهدف إلى الكشف عن مدى تغير عادة تحضير وتناول الخبز التقليدي في المنازل خلال الخمسين سنة الأخيرة، ورصد صور العلاقات الاجتماعية بين أفراد مجتمع مدينة ميلة في الماضي والحاضر، من خلال ظاهرة صنع و استهلاك الخبز التقليدي بهذه المدينة. لقد كشفت الدراسة عن عدم انحِسَار عادة تحضير و تناول الخبز التقليدي لدى الأسر بمدينة ميلة ، مع بروز مظاهر جديدة لهذه العادات، متسببة في تراجع ملحوظ للدور المطبخي للمرأة. This study is a part of the qualitative anthropological studies interested in the question of the diet and nutritional habits of the Algerian family, because it aimed to reveal the extent of the change in consumption and bread preparation habits traditional in homes over the past fifty years, and monitoring pictures of social relations between members of the community of the city of Mila in the past and the present, through the phenomenon of making and consuming traditional bread in this city. The study found that the habit of eating and baking traditional bread among families in the town of Mila. With the appearance of new aspects of these habits, generate a clear regression of the culinary role of women.
