Résumé: Enzymes have been part of our daily lives for a very long time, they are present in all cells and are essential for the survival of all living species. Indeed, enzymes are able to break down and transform various compounds present in the living environment. A functionality that some industries can use in different fields Indeed, industries are among the first to recognize and exploit the enormous potential of enzymes, because they understood that if it was possible to accelerate the reactions, the production processes could be realized in much less time, with cheaper raw materials. They come from different origins, but the enzymes of microbial origin are the most produced. Microorganisms are the main source of industrial enzymes: 50% come from fungi and yeasts, 35% from bacteria, while 15% are of plant or animal origin. There are countless ways of using enzymes. Indeed, microbial enzymes can be used in many ways to achieve goals often very different from each other. Because of their low cost, high productivity, environmental protection, plasticity and high availability. they are widely used in industrial processes. they are used in the pulp and paper industry, in textiles, in detergents, in tanneries, in the food industry, in the alcohol industry, in bakeries, in confectionery, in the dairy industry as well as in pharmaceuticals. It is then possible to develop large global markets for enzyme production.
