Identification Et Caractérisation Technologique Des Bactéries Lactiques Isolées À Partir De Smen Camelin
Résumé: Smen is a product widely used by Algerian nomadic peoples, and has been presented for many therapeutic purposes. The aim of this work consists in the study of certain technological powers of the lactic acid bacteria isolated from the camel Smen. The pre-identification of isolated strains is based on phenotypic, biochemical and physiological tests. As well as, technological tests are sought such as proteolytic, lipolytic activity and antimicrobial activity. These tests identified 10 isolates. These isolates were affiliated to five bacterial genre, which correspond to Lactobacillus sp, Leuconostocsp, Lactococcus sp. Streptococcus sp and Enterococcus sp. The Lactobacillus sp genre is the most dominant with a percentage of 30%. Most of which are homofermentative, heat-resistant and able to grow at pH 9.6. These strains are able to degrade citrate and have low lipolytic activity and high proteolytic activity with powerful antimicrobial activity against pathogenic strains.
