Isolement Et Dénombrement Des Bactéries Pathogènes De La Viande Cameline Réfrigérée
Résumé: Meat is a favorable environment for the development of bacteria due to the presence of several nutrients that bacteria depend on during their lifetime, such as protein and water. the objective of this study is to monitor the evolution of pathogenic bacteria in refrigerated camelina meat, This evolution is studied by a certain count of pathogenic bacteria. This study was conducted by collecting thigh samples from six cameline carcasses. Pathogenic bacteria such as total and faecal coliforms, staphylococci and psychrotrophic bacteria are counted in VRBL, Chapman and PCA culture media respectively, and salmonella testing is conducted on the Hektoen culture medium. The count showed that the contamination rate was high for all the bacteria Flores sought, with the predominance of psychrotrophs and the presence of salmonella in all samples collected and on all carcasses. The results show that the mean total and faecal coliform, staphylococcus and psychrotrophic contamination of camelina meat are 6.51±0.49logufc/g, 4.8±0.73logufc/g, 6.35±0.2logufc/g and7.24±0.4logufc/g respectively. All these results demonstrate that the initial contamination rate was high due to non-compliance with hygiene conditions
