Extraction, Recherche, Identification Et Caractérisation d’une Activité Protéolytique D’intérêt Industriel À Partir d’un Homogénat Du Système Digestif Du Poisson
Résumé: This work is a contribution to the research and identification of a digestive proteolytic activity of industrial interest in the common sardine "Sardina Pilchardus". It is a species of pelagic fish that is widely distributed throughout the Mediterranean, particularly in Algeria, and is of great economic and social interest. The proteolytic activity is the result of a cut in the peptic bond following the presence of a protease. However, the digestive proteases of fish viscera have aroused growing interest due to their unique and interesting properties which are highly appreciated in a wide range of applications and industrial processes. The most important proteases in fish viscera are acidic gastric enzymes (pepsin, chymosin, gastriscin and cathepsin D) and alkaline intestinal enzymes (trypsin, chymotrypsin, collagenase and elastase) which can be extracted and purified by different chromatographic methods while evaluating the proteolytic activity by assay methods on various protein substrates. The characterization of these proteases by innovative proteomics methods is necessary to allow a study of their structural and functional properties..
